Well, I should qualify that statement. I like cute food that tastes good. I have a dear friend who simply adores marzipan. Marzipan can be beautiful, cute and at times even adorable... but I'm sorry Holly, it is never, never ever tasty. Sushi on the other hand is very, very cute and since you can fill these little rice-seaweed-wraps with almost anything and everything you can create something that nearly anyone (except my Nana) will find pleasing to eat.
Today as a late lunch I made a variation of an avocado roll and added red pepper for a bit of color, crunch and spice. I've discovered microwavable sticky rice that makes the process even more easy and quick. Though if you are going to make it for more than one I suggest making the rice the old-fashioned way (or with a rice cooker) because otherwise it will get expensive.
It has taken a very long time to get the hang of rolling the sushi rolls. Personally, I find making half-rolls is easier. Plus, in this fashion they are bite-sized instead of filling your whole mouth. But don't fret if you can't get your rolls to close perfectly (or at all), or your knife is too dull and squishes the pieces into sushi-pancakes, or your rice isn't sticky enough (I say these all from experience). To me, the most wonderful aspect of sushi is that it doesn't matter how it looks, it all tastes the same - wonderful.

Oh, tee-hee, the sushi plate (complete with Mickey Mouse) is part of a set which my Mum brought back for us from a trip she took to Disney World. And the cloth napkin is a lovey Mireio original!
